Abstract: Service as the main competitive advantage of the restaurant enterprises is discussed. The author analyses the situation at the Russian restaurant market, including causes of personnel problems. Careful attention is paid to comparison of service activity of Russian enterprises and personnel policy and service strategies of the world-beating restaurant-keepers.
